The Captain's Famous Jambalaya

This jambalaya may have been a few places since the bayou, but it's a thick, rich dish that everyone will love! I've experimented with many types of seafood in this recipe, and the flavor and consistency of snapper works the best. Serve with French bread and hot red pepper sauce!

Michelle's Zesty Hummus-like Spread

I made this recipe the other day when I was hungry for hummus but didn't have all the ingredients. Italian-style salad dressing adds a nice zest to an otherwise traditional favorite. Garnish with the unused half of the red pepper or spinach. Serve with bagels or pita bread.

These are enormous, stick-to-your-ribs kind of burgers with a surprise in the center. A real family favorite. I like to serve them on a bun topped with sauteed mushrooms and Swiss cheese. Use extra lean or lean ground beef instead of medium because the bacon adds to the fat content of the meat.
