Chocolate Chip Banana Muffins

First off, I only used 1/4 of the oil. I also added 2 tablespoons of flax seeds to make it a bit more healthy, and also added about a teaspoon of cinnamon, and some quick oats to top the muffins before baking. They came out great! Super subtle sweetness. I made the mistake of using milk chocolate chips, which I now understand sink to the bottom of the muffin. But it's like an added surprise.

Oatmeal and Applesauce Pancakes

GREAT pancakes! What I did differently: added 3/4 tablespoon cinnamon, couple pinches of nutmeg and 3 tablespoons of organic cane sugar. Also- used 1/2 cup of cottage cheese (that was smushed a bit extra with a fork to minimize the lumpy-ness) in place of sour cream (didn't have any). Even with this change, they were wonderfully hearty and moist. Will definitely make again- with Stonyfield organic maple yogurt and walnuts. mmmm.
