I made this for my Mom's birthday. It was perfectly chewy and cakey. It was a big hit!! I will make this recipe again soon!!!

Spinach and Rice (Spanakorizo)

Reviewed on Oct. 3, 2008 by MMOH
This is very good. My husband refused to try it, but I suppose that's his loss. I did have to use tomato paste rather than sauce since that's all I had on hand, and I also used couscous rather than rice. The lemon juice and feta cheese added at the end are a definite must. This went very well with Grecian Pork Tenderloin from this site.

Grecian Pork Tenderloin

Wow, this was good. I subbed lemon juice for the lime juice. If you have the time definitely marinate this longer than 5 hours. And make sure the marinade is very well salted. Can't wait to make this again though.
