Turkey Potato Casserole

For such a simple 'leftovers' casserole, we all enjoyed this! I didn't layer anything, just mixed the onions and green beans right in with the turkey and soup. Per other reviews, I did microwave the chopped onions for a minute to soften a bit. I used what was left in a package of shredded cheddar and sprinkled that on top, then topped that with some American cheese slices since that was all I had. Threw it all together in 5 minutes, headed out to the barn and came back an hour later to a scrumptious, bubbly comfort-food casserole. Oh, I used leftover mashed sweet potatoes, (no marshmallows, yuk!) that had a pecan, brown sugar topping and it was soooooo good!

Pork Chops with Apples, Onions, and Sweet Potatoes

I am on a quest to finish up the last of the sweet potato bounty from the garden and found this recipe. Very nice comfort food! I followed the suggestion of CookinNurse and made this in the slow cooker. It came out great, the chops were juicy and moist, the vegetables were cooked perfectly. The only thing I added was about a half cup of apple cider to the pot. Served some cornbread stuffing on the side. We all enjoyed this.

Louisiana Sweet Potato Pancakes

I tried this recipe in an attempt to use up the sweet potato bounty from the garden. I followed some of the tips given by other reviewers and the pancakes came out perfect. My daughter and I loved them, hubby didn't care for them. We liked them best with a sour cream topping. Popped the leftovers in the toaster for breakfast the next morning, yummy!
