Halibut with Zesty Peach Salsa

I made this using mahi mahi. I baked it with the extra marinade and then poured the cooked juiced over rice and my fish before topping it off with the salsa. I loved the flavor. I will definitely make this again.

Broccoli Hamburger Casserole

This didn't work for us. I really wanted to like it, but the broccoli was mushy and the sauce felt like it was missing something. It kind of reminded me of beef stroganoff with broccoli and cheese.

Easy Beef Stroganoff

This recipe definitely lives up to the title. It's easy to make, and it's quick. I felt like the sauce was a little runnier than I would have preferred, but it still had a great taste. I'll make this again.

German Potato Pancakes

we must have done something wrong. The potatoes didnt sit out for more than a couple mins before we mixed it in. i cant explain the taste but it was not good. but bc of all these good reviews, maybe something went wrong at our house.

Blueberry Sauce

This is a very good blueberry sauce. I didn't have almond extract, and didn't add the cinnamon. I added more cornstarch to it, because I wanted a thicker sauce. It was great over cheese cake cups, and I love to eat it with vanilla ice cream.

Chicken Pesto Paninis

My husband loves pesto, so I'm constantly trying to find different ways to use it. I love the idea of using it for a sandwich. I marinated my chicken in balsamic vinegar before grilling it and then slicing it thin. I preferred my sandwich with roasted red peppers and caramelized onions on it. Hubby liked his with just chicken, pesto and some provolone. I'll make these again, and I liked the idea of also using deli sandwich meat.

Sue's Hot Fudge Sauce

Barbecue Beef Cups

I was pleasantly surprised at how good these are. They're quick and easy, which makes them great for a weeknight meal. I didn't have any dried onion, so I just seasoned the beef with onion and garlic powder. I wasn't sure if the baby would like them, but he devoured the one we gave him.

Jam Filled Butter Cookies

I agree with other reviewers, the dough is very crumbly. I doubled the batch and made these changes I added 1/4 cup sour cream, 1 tsp salt & cinnamon, and 1/2 tsp of nutmeg and increased the sugar to 1 and 1/4 cups.

Baked Pork Chops I

Wow, this was great. Hubby, the baby and I scarfed it down. I only had 4 pork chops, but I thought that was the perfect amount of chops for the amount of sauce. I actually used around a cup of wine and deglazed the pan that I fried the chops in. I let the wine reduce a bit before adding the milk and soup. The breading gave the chops a great flavor and helped to keep the chops incredibly tender. I only cooked my chops for a total of 40 minutes rather than and hour and a half. I served this with mashed potatoes and corn. I can't wait to eat the leftover for lunch tomorrow.

Monkey Bread I

My hubby adores this bread, but I had to make it 4 times before I perfected it. I use a four pack of biscuits. I'll put about 2 cans of biscuits in the pan and then pour a little over half of the caramel mixture over them. Top with the rest of the biscuits and then the rest of the caramel. I've also found the I need to make a little more caramel than called for. I use 1 cup of unsalted butter, 1 1/2 cups of brown sugar, and add a little vanilla(about 1 TSP) and some milk (maybe 2 or 3 TBS). It's very good, and rarely a weekend goes by without a mention of how nice some monkey bread would be.

Avocado Ranch Salad Dressing

Yummy! I have a ton of ranch powder that I'm trying to use up, so I used 1.5 TBS of that rather than the individual seasonings, the vinegar and the buttermilk. I made this to serve with Buffalo Chicken Fajitas, but it's also very good to serve as a veggie dip.
